Ice Skating Lesson

Hi guys, hope you are having a good week. I had my second ice skating lesson on Friday 17th and it was just as good as the last. We started off by warming up; skating a few lengths, practising lengthening our glides etc. Then we reviewed some of the things we had learned the week before including lemons and backwards skating (which I am now much better at) as well as learning how to do a longer one foot glide. Another technique taught was turning corners whilst keeping our feet still and also on one foot. Once again at the end of the session we were able to practice what we had learned. It was whilst trying to do lemons that I took a tumble, but luckily managed to land in a way that meant I could get straight back up. I have also ordered my own pair of skates which arrived today and fit perfectly. So roll on Friday!

Beef Tacos with Stir Fried Vegetable Rice

For my second cooked meal I made Old El Paso Beef Tacos with stir fried veggie rice. This was a pretty easy one to make as the Old El Paso kits come with the taco shells, seasoning and salsa as well as instructions, but I’ll include them anyway.

Ingredients

500g Minced Beef

Grated Cheese

Tomatoes

Lettuce

Oil

Spice Mix (included in kit)

Salsa (included)

Taco shells (included)

Instructions

1. Brown the mince with a splash of oil and once done, drain off any excess liquid.

2. Add the spice mix and 100ml of water.

3. Stir in and when bubbling, reduce the heat and simmer for 10 minutes.

4. Heat the taco shells open end down on a baking tray at 180 degrees C for 2-3 minutes.

5. Fill taco shells and enjoy!

All you need to do for the rice is to cook it, drain it and then stir fry it with some veg. We used mushrooms, peas, peppers and onions.
